Vegan pancake cereal, mini pancakes, baby pancakes, silver dollar pancakes, or even TikTok pancakes, no matter what you wish to call them, the fact is they took the online foodie community by storm and there’s no sign of them stopping. They make a fun, tasty and super versatile breakfast or snack, and are easier to make than you might think.
What Is Pancake Cereal?
Basically, these are miniature pancakes, slightly crispier on the outside than big pancakes, with an extra fluffy middle. They can be of different sizes, from slightly larger, about 2 inches in diameter, to the tiniest ones, made with only a drop of batter onto the pan.
They’re so tiny you can fit a couple on a spoon and eat them with milk or yogurt, which is where the name comes from, but they can easily be enjoyed with more traditional toppings as well.
They also go by other names, including mini pancakes, baby pancakes, silver dollar pancakes (these are usually slightly larger though) and TikTok pancakes.
Ingredients You’ll Need to Make Vegan Pancake Cereal
To make these vegan mini pancakes, you only need a handful of the most basic ingredients:
Flour - use all-purpose flour or spelt flour
Baking powder - makes the pancakes extra soft and pillowy
Sugar - optional and recommended if you like your pancakes on the sweeter side
Vanilla extract - for added flavour
Plant-based milk - I used almond milk, but other types, such as soy or oat, will work too
How to Make Mini Pancakes in a Pan
There are a number of different tools you can use for shaping these. It really depends on what you have at hand. I used a good old-fashioned piping bag, but I’ve heard people have had success with items such as a baster, ketchup bottles (make sure to clean it thoroughly), or a ziplock back with a hole on the bottom corner as well.
If you don’t have anything like that at hand, a teaspoon will work too, but they might not turn out perfectly round.

It depends on the quantity you are making. For this recipe, it shouldn’t take you more than 10 minutes.
How do I serve them?
You can enjoy vegan pancake cereal like normal cereal, in a bowl with milk or yogurt. For this, it’s especially good if they’re as tiny as possible.
You can also serve them like regular pancakes, topped with syrup, vegan butter, chocolate chips, fresh fruit or powdered sugar.
Do they freeze?
Absolutely! Mini pancakes freeze very well and can be reheated either in a pan or in a preheated oven (at 180C/350F) for up to 7 minutes.

- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- ⅔ cup plant-based milk
- 1 tablespoon cocoa powder, optional - (for chocolate pancakes)
instructions
- Whisk all the ingredients in a large bowl until the batter is smooth.
- Heat up a nonstick pan and start forming mini pancakes with a piping bag or the help of a teaspoon.
- They take less than a minute to cook on one side, so make sure you're keeping an eye on them. By the time you drop the last one on the pan, the first one is likely ready to be flipped. If you’re comfortable with using chopsticks, they’re perfect for flipping these. You can also use a fork to flip them and cook for just a few seconds more on the other side.
- Serve with milk or yogurt, or with your favourite pancake toppings, such as maple syrup, vegan butter, fresh fruits, or chocolate chips.
