This chickpea spinach pizza with juicy vine tomatoes is not your average homemade pizza. If you’re looking to switch up pizza night, give this healthier, crunchier, plant-based version a try.
Ingredients You’ll Need to Make Chickpea Spinach Pizza
Pizza dough - store bought or homemade. If you’re making your own crust, I recommend giving this pizza dough recipe a try.
Olive oil - high quality extra virgin olive oil is best.
Tomato passata aka tomato puree - pureed, strained tomatoes with no additives or flavourings. Unlike crushed or chopped tomatoes, passata is uniform and smooth, which makes it perfect for tomato-based sauces.
Plant-based milk - soya, almond, oat, rice, hemp… any kind will do.
Balsamic vinegar - darker, sweeter and thicker than regular vinegar, which makes it perfect for enhancing sauces and dressings.
Sugar - optional, but recommended. You can also substitute it with coconut sugar or any kind of liquid sweetener.
Paprika, garlic and onion powder - to spice up the sauce and make it more flavoursome.
Chickpeas - canned chickpeas that have been well rinsed and drained will do. You can also cook the chickpeas yourself if you prefer not to use canned.
Spinach - the perfect pizza topping that adds extra colour, flavour, texture and vitamins.
Vine tomatoes - look amazing on the pizza and go great with the sauce.
Vegan cheese - use your favourite type and brand to take this pizza to the next level.
How to Make This Vegan Chickpea Spinach Pizza
Prepare the Crust
Roll out the pizza dough into a round shape and then transfer it to a parchment paper lined pizza pan and either pinch the edges or fold them over to form a crust.
Cook the Sauce
Mix olive oil, tomato passata, milk, balsamic vinegar, sugar, paprika, onion and garlic powder in a bowl with a whisk. Spread the sauce, saving 3-4 tablespoons, on the pizza crust and put the pizza in the oven for 10 minutes.
Make the Chickpea Topping
Heat 1 tablespoon of oil in a skillet, add the reserved sauce and the chickpeas and cook for 3-5 minutes over medium heat.
Top and Bake
Spread the chickpea mixture and the vegan cheese sauce onto the pizza, along with spinach, vine tomatoes and any other veggies of your choice. Put it back into the oven for another 10-15 minutes until the edges are crispy.

Chickpea Spinach Pizza
ingredients
- 1 batch pizza crust (homemade or store bought)
For the sauce:
- 2 tablespoons olive oil - (divided)
- ½ cup tomato passata
- 3 tablespoons plant-based milk
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Toppings:
- 1 (15 oz) can chickpeas - (drained and rinsed)
- Handful of spinach
- ½ cup vine tomatoes
- ⅓ cup vegan cheese - (optional)
instructions
- Preheat the oven to 200°C (400°F).
- Transfer rolled out pizza dough to a parchment paper lined pizza pan and either pinch the edges or fold them over to form a crust.
- To make the sauce, mix all the sauce ingredients in a bowl with a whisk.
- Spread the sauce, saving 3-4 tablespoons, on the pizza crust and put the pizza in the oven for 10 minutes.
- Meanwhile, heat 1 tablespoon of oil in a skillet, add the reserved sauce and the chickpeas and cook for 3-5 minutes over medium heat.
- Remove the pizza from the oven. Then, spread the chickpea mixture and the vegan cheese onto the pizza, along with spinach, vine tomatoes and any other veggies of your choice.
- Put it back into the oven for another 10-15 minutes until the edges are crispy.
