It’s no secret that I love pasta, and I just found my new favourite recipe. This very basic sauce has turned out to be a life-safer for me on more than one busy weeknight, so if you’re looking for a quick and utterly uncomplicated pasta recipe, this one's for you.
Easy Pasta with Cherry Tomato Sauce
This easy cherry tomato sauce is essentially a simplified version of the classic marinara sauce. Because it’s made with tiny cherry tomatoes that break down in no time, it takes less time to cook and is even easier to make than other tomato-based sauces.
How to Make Easy Pasta with Cherry Tomato Sauce
Cook the Spaghetti
Below are a few tips for how to cook pasta for just the right taste and texture.
- Make sure to use a large pot and enough water, so the pasta doesn’t stick together. The ideal ratio is said to be 8 cups of water for 5 ounces of pasta.
- Bring the water to a boil before you add the pasta.
- Add salt once the water is already boiling. This ensures that salt is entirely dissolved.
- Once you add the pasta, give it a good stir to prevent it from sticking together.
- Keep stirring every once in a while; this is the only way you can prevent it from sticking together. Don’t add oil to the pasta water as this really does nothing to prevent it from clumping.
- When the pasta’s been boiling for about 8-10 minutes, take a piece of pasta, cool it and give it a bite. It should be firm, but not crunchy in the middle.
Prepare the Sauce
Heat olive oil in a large saucepan over low heat. Add onion and garlic, and slowly caramelise the onion.
Add cherry tomatoes and cook on low heat for about 10 minutes. Some of the tomatoes should start to fall apart, with a few larger chunks remaining. Season with salt and black pepper to taste.
Assemble
Transfer the cooked pasta into the pot and give it a good stir. Serve right away.
Instructions for Storage and Freezing
