This is recipe is a game-changer. These overnight oats are creamy, just sweet enough, with a hint of peanut butter. But what you’ll love most about them is the texture, because these oats have non of that starchy, grainy feel of some of the recipes I’ve tried so far.
What Are Overnight Oats?
If you’ve been to Instagram, Pinterest, or planet Earth in the last few years, you’ve probably seen them before. And if you’re a bit late to the game, like I am, you’re probably wondering what overnight oats even are. I mean, why not just make regular oats, right?
Yes and no. First of all, overnight oats don’t require cooking, which means they can save you a ton of time, especially if your mornings are usually too busy to eat breakfast. They’re called overnight oats, because all you have to do is let them soak over night.
The soaking also makes them much easier to digest. While oats soak, their starches break down, which not only improves their digestibility, but also greatly reduces their physic acid, which makes them more easily absorbed by your body. You don’t get that by just heating oats in the microwave or on the stove.
How Long Can You Leave Overnight Oats in the Fridge?
One of the major benefits of overnight oats is that they save time, and if you’re planning on making a whole batch and keeping it in the fridge for busy weekday mornings, you’re probably wondering how long they can wait. Even I was surprised by this answer.
Overnight oats can be stored in an airtight container for up to five days. They’re definitely at their finest on their first two days, as they continue to soften the longer they sit (the soaking kind of works like cooking), but this is great news if you’re always in a hurry, or if you like your morning oats on the super-creamy side. Just remember to give them a good stir before digging in.
How to Make Overnight Oats
All you have to do is add your oats, liquid of choice and optional add-ins to a jar, give it a good stir, close the lid and pop it in the fridge for the “slow cooking” to begin. You don’t even have to use a jar with a lid if you don’t want to, but I find it so much more practical. In the morning, you wake up with a healthy breakfast already waiting!

Basic Peanut Butter Overnight Oats
ingredients
- ⅔ cup plant-based milk (I used almond milk)
- 1 tablespoon maple syrup
- 1 tablespoon peanut butter
- 1 tablespoon chia seeds
- ½ cup rolled oats
instructions
- Add almond milk, maple syrup, peanut butter and chia seeds in a blender.
- Blend for 30 to 60 seconds, until chia seeds are completely blended.
- Stir in rolled oats and pulse for 5 seconds, just enough so that they break apart a little, but still retain their grainy texture.
- Pour into a jar, close the lid and let it sit in the refrigerator over night, or for at least 8 hours.
