How to Make Chickpea Flour Cookies
Mix dry ingredients: Chickpea flour, coconut flour, cocoa powder, baking soda and sugar. Don't be tempted to reduce the amount of sugar, because they won't turn out as good.
Mix wet ingredients: Flax meal and water (this is also known as a flax egg), coconut oil, maple syrup and vanilla extract.
Whisk wet ingredients into dry ingredients. Stir in dark chocolate chunks. You can easily swap this with chocolate chips, but I prefer larger chunks of chocolate in this recipe.
Roll the dough into golf-ball sized balls, around 2 tablespoons, and place onto the baking sheet. Flatten each cookie slightly with your hand.
Bake for 10-12 minutes or until the edges feel slightly crisp.

- ¾ cup chickpea flour
- ¼ cup coconut flour
- ¼ cup Dutch processed cocoa powder
- ½ teaspoon baking soda
- ¼ cup sugar
- 1 tablespoon flax meal (ground flax seeds)
- 6 tablespoons water
- ⅓ cup coconut oil, melted
- 3 tablespoons maple syrup
- ½ teaspoon vanilla extract
- 2 oz dark chocolate, roughly chopped

- Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the chickpea flour, coconut flour, cocoa, baking soda, and sugar.
- Add flax meal and water to a medium bowl and whisk until a thin paste forms. Then, whisk in coconut oil, maple syrup, and vanilla extract. Stir in the chocolate and let the dough rest for a couple of minutes to thicken.
