How to Make Sweet Roasted Chickpeas
Roasted chickpeas are easy to make, and with a few extra tips and tricks you can make sure they turn out crunchy and delicious every single time.
1. Pat them dry. This is crucial to ensure they’re crunchy when roasted.
The best way to do this is to place the chickpeas onto a few layers of paper towel, and then cover them with a few more layers of paper towel. Rub them until they’re almost completely dried up. You might need to replace the towels to make sure you soak up all the liquid. The peels might come off, in which case discard them. But there’s no need to try and peel the chickpeas.
2. Spread the chickpeas evenly on a baking sheet covered with parchment paper. Bake for 20 minutes.
3. Remove from the oven and carefully drizzle with coconut oil, maple syrup and cinnamon. Stir carefully with a spoon, making sure the chickpeas are evenly coated.
4. Return to the oven and bake for another 10 minutes. Adding seasoning mid-way makes the chickpeas extra crunchy.
5. Remove from the oven and give the chickpeas a very thorough stir. Return back to the oven and bake for another 10 minutes.
6. When done, turn the oven off, crack the door open slightly, and leave the chickpeas inside as the oven cools down. This results in the crunchiest chickpeas ever.
How Do I Store These Chickpeas for Later?
You can simply store them at room temperature. These chickpeas will stay super crunchy for about one day, and while they lose some of the crunch later on, you can still enjoy them for up to 3 days. They’re perfect for tossing in a salad.
