How to Make Vegan Baked Donuts
Baked donuts are one of those desserts that are a breeze to make, even with zero knowledge of baking. Here’s what you need to do.
1. In a large mixing bowl, combine flour, sugar, cocoa powder, salt and baking powder.
2. In a measuring cup or smaller bowl, whisk together milk, melted coconut oil and vanilla extract.
3. Pour wet ingredients into dry ingredients and whisk well.
4. Fill the donut pan to the edge with the batter.
5. Bake for 13 minutes, then remove the tin from the oven.
6. Let the donuts cool down slightly in the pan, then remove them from the oven and glaze with melted chocolate.
Do I Need a Donut Pan?
You’ll get the best results if you use a donut pan for this recipe. I use this donut baking tin.
However, it’s completely understandable if you don’t have a donut pan (I know I didn’t for the longest time). And can I let you in on a little secret?
You can easily make this recipe in a regular muffin tin as well. The only difference is that your donuts will looks like muffins. The flavour will stay the same. Just make sure to fill up the muffin cups only about half way up, to make sure the middle of the muffin gets properly baked.
However, if you want to go the extra mile, here's a cheap and easy DIY trick:
- Roll a ball of tinfoil for each muffin cup (six for this recipe), approximately the size you want the donut holes to be.
- Pack the ball tightly and press it down firmly to flatten the bottom.
- Place the tinfoil balls into each of the muffin cups.
- Pipe in the batter around the balls and bake the donuts.
- Once baked, remove the donuts from the tin, and then remove the tinfoil inserts.
How Long Do They Keep?
When kept at room temperature, these baked donuts stay fresh for about 1 to 2 days. They will keep well for about 1 week in the fridge when properly stored.
Do I Have to Keep Vegan Baked Donuts in the Fridge?
Yes, I’d recommend storing these donuts in an airtight container in the fridge.
Do They Freeze?
Yes, but it’s best to freeze them before glazing them. To freeze these donuts, wrap them tightly with aluminium foil or plastic freezer wrap, or place them in an airtight container or freezer bag.
When properly stored, baked donuts will keep in the freezer for about 2 to 3 months, but will remain safe beyond that time.

Vegan Baked Donuts with Chocolate Glaze

- ¾ cup all-purpose flour
- ⅓ cup granulated sugar
- ¼ cup unsweetened cocoa powder
- ¼ teaspoon salt
- ½ teaspoon baking powder
- ⅔ cup plant-based milk (I used almond milk)
- 2 ½ tablespoons coconut oil
- 1 teaspoon vanilla extract
- ⅓ cup vegan dark chocolate, melted
Preheat the oven to 350°F (180°C). If you're not using a non-stick muffin tin, lightly grease the donut pan and set aside.
In a large mixing bowl, mix together the flour, sugar, cocoa powder, salt and baking powder.
In a measuring cup or small bowl, whisk together the milk, melted coconut oil and vanilla.
Pour wet ingredients into dry and stir until just evenly mixed.
Portion the batter evenly among the 6 donut moulds, filling them almost all the way up.
Bake for 13 minutes, until the donuts have risen and a toothpick inserted in to one comes out clean. Take the tin out of the oven and allow to cool or about 10 minutes before removing them from the pan.
In the meantime, prepare the glaze by melting the chocolate. Place the chocolate in a microwaveable bowl and heat it in 15 second intervals, stirring between each one.
Remove the donuts from the pan, place them on a cooling rack and frost them with melted chocolate.
