All-purpose flour - if you’re measuring in cups, make sure to use the “spoon and level” method: using a spoon, scoop the flour into the measuring cup, then use the back of a knife to level off the top of the measuring cup.
Sugar - granulated sugar works well in this recipe. I don't recommend reducing or omitting the amount, as these cookies have a very strong lemon flavour that needs to be sweetened.
Baking soda - works as a leavening agent. Don't substitute it with baking powder!
Salt - adding salt to sweet recipes helps to bring out the flavours, and it really does make a difference. Use finely ground sea salt, and measure it precisely.
Lemons - the recipe calls for the juice and zest of 2 lemons. Make sure you use organic unwaxed lemons.
Coconut oil - melted refined coconut oil works best, as it has a very neutral flavour that lets the lemons shine. I don't recommend reducing the amount, as fat is an important factor in the taste and texture of these cookies.
Vanilla extract - adds the special sweet aroma and taste.

I previously commented , now my cookies are baked and cooled . I didn’t add the glaze I was wondering if this would be too sweet but they are perfect , crispy edges wow the flavor is spot on , next time I will add one more tbs lemon juice I like my sweet just a tad sweet ..I baked mine for 14 minutes I used a cookie cutter the dough was more for a rolling cookie . It gave me 17 cookies
