Do I Have to Blind Bake the Crust for This Pie?
Yes. Blind baking is a fancy term that simply means baking an empty crust, usually weighed down by pie weights or some dry beans to prevent the dough from puffing up.
This step is usually required with pies where you want the crust to remain crunchy despite a very moist filling, for example when you’re making quiche, custard pies, cream pies, pudding pies, or no-bake pies, like this strawberry pie.

Make the Vegan Strawberry Filling
That’s the easy part, as most strawberry pie fillings are naturally vegan anyway. To make this filling, you'll need no more than 3 ingredients and 15 minutes of time.
1. Divide sliced strawberries into two parts. Arrange half of the sliced strawberries in the baked pastry shell.
2. Mash the remaining berries and combine them with sugar in a medium saucepan. Place the saucepan over medium heat and bring to a boil, stirring frequently.
3. In a small bowl, whisk together cornstarch and water. Gradually stir the cornstarch mixture into the boiling strawberry mixture. Reduce the heat and simmer the mixture until thickened, about 10 minutes, stirring constantly.
4. Pour the mixture over the strawberries in the pastry shell. Chill for at least 4 hours before serving.
Tips for Making the Best Strawberry Pie
- Adjust sweetness according to how sweet your strawberries are. You can also substitute sugar with coconut sugar, maple syrup, or 1 dropper full of stevia.
- Feel free to substitute cornstarch with tapioca or arrowroot starch.

This depends on a number of factors. To maximise the shelf life of strawberry pie, cover it loosely with foil or plastic wrap. The pie should last:

Should strawberry pie be refrigerated?
Fruit pies can often be left out at room temperature, but because this strawberry pie is garnished with coconut whipped cream it will need to be refrigerated. It will keep covered in the refrigerator for 3 days.
