Chickpea Spinach Pizza

Servings 1 pizza
- 1 batch pizza crust (homemade or store bought)
For the sauce:
- 2 tablespoons olive oil (divided)
- ½ cup tomato passata
- 3 tablespoons plant-based milk
- 1 tablespoon balsamic vinegar
- 1 teaspoon sugar
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Toppings:
- 1 (15 oz) can chickpeas (drained and rinsed)
- Handful of spinach
- ½ cup vine tomatoes
- ⅓ cup vegan cheese (optional)
Preheat the oven to 200°C (400°F).
Transfer rolled out pizza dough to a parchment paper lined pizza pan and either pinch the edges or fold them over to form a crust.
To make the sauce, mix all the sauce ingredients in a bowl with a whisk.
Spread the sauce, saving 3-4 tablespoons, on the pizza crust and put the pizza in the oven for 10 minutes.
Meanwhile, heat 1 tablespoon of oil in a skillet, add the reserved sauce and the chickpeas and cook for 3-5 minutes over medium heat.
Remove the pizza from the oven. Then, spread the chickpea mixture and the vegan cheese onto the pizza, along with spinach, vine tomatoes and any other veggies of your choice.
Put it back into the oven for another 10-15 minutes until the edges are crispy.
