Garlic Roasted Chickpeas
These garlic roasted chickpeas are the perfect crispy, low-calorie, high-protein snack that is ready in under half an hour.

- 1 can (14-ounce) chickpeas
- 1 teaspoon salt
- ½ teaspoon garlic powder
- 1 tablespoon olive oil
Heat the oven to 400°F (200°C). Rinse and drain the chickpeas. Dry them thoroughly with a clean dishtowel or paper towels. They should feel dry to the touch.
Toss the chickpeas with salt, garlic powder and olive oil, making sure they are evenly coated. Spread the chickpeas out in an even layer on a rimmed baking sheet.
Roast the chickpeas in the oven for 15 minutes. Take the sheet out of the oven, stir the chickpeas and roast for another 10 minutes, until golden and slightly darkened, dry and crispy on the outside, and soft in the middle.
Serve them warm or cool. They are nice and crispy when warm, and chewy when cool.
