Vegan Peach Cobbler

A healthier, vegan version of an iconic summer dessert. This melt-in-your mouth vegan peach cobbler is lower in calories than your classic cobbler, and tastes so good that just one serving is never enough.

Ingredients

Peach Filling

  • 4 fresh peaches, sliced
  • ¼ cup dark brown sugar or maple syrup

Cobbler Topping

  • ½ cup coconut oil
  • 1 cup all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ cup plant-based milk (I used almond milk)

Instructions

  • Preheat the oven to 350°F (175°C), and grease the bottom of a 9" square pan with a bit of coconut oil. Toss in the sliced peaches and dark brown sugar, and give it a quick stir.
  • In a medium bowl, mix the melted coconut oil, flour, sugar, baking power and almond milk until a thick batter forms.
  • Scoop the mixture over the top of the peaches. The batter should be thick, so it's best to evenly spread out a few tablespoons of it across the pan. Press it down lightly with the back of a spoon or your fingers.
  • Bake for 30 to 35 minutes. The filling should be bubbly around the sides, and the top golden brown and crumbly.
  • Remove from the oven and let it sit at room temperature for 20 to 30 minutes before serving. Serve with a scoop of vanilla ice cream while it's still slightly warm.
