Vegan Rocky Road

Vegan rocky road is one of the easiest, fastest, delicious and surprisingly good looking treats that hardly anyone will say no to. It’s a childhood favourite, made without dairy and gelatine, but just as chocolaty, crunchy and flavour-packed as you remember it.

Ingredients

  • 9 oz dark chocolate
  • ½ cup coconut butter
  • 2 tablespoons maple syrup
  • 2 oz digestive biscuits
  • 1 cup vegan mini marshmallows
  • cup vegan white chocolate chips
  • glace cherries, halved
  • ¼ brazil nuts, chopped
  • ¼ cup desiccated coconut

Instructions

  • Line a baking tray or any rectangular dish with cling film.
  • Melt the coconut butter, chocolate and maple syrup together in a hot water bath, or for 30 second bursts in a microwave until it's all melted.
  • Fold the smashed biscuits, mini marshmallows, chocolate chips, halved cherries, chopped nuts and coconut into the melted chocolate mixture.
  • Pour the mixture into your prepared baking tray/dish and place in the fridge until set (about 2 hours).
  • Cut into 9 squares and serve.
