Vegan Rocky Road
Vegan rocky road is one of the easiest, fastest, delicious and surprisingly good looking treats that hardly anyone will say no to. It’s a childhood favourite, made without dairy and gelatine, but just as chocolaty, crunchy and flavour-packed as you remember it.

Servings 9 bars
- 9 oz dark chocolate
- ½ cup coconut butter
- 2 tablespoons maple syrup
- 2 oz digestive biscuits
- 1 cup vegan mini marshmallows
- ⅓ cup vegan white chocolate chips
- ⅓ glace cherries, halved
- ¼ brazil nuts, chopped
- ¼ cup desiccated coconut
Line a baking tray or any rectangular dish with cling film.
Melt the coconut butter, chocolate and maple syrup together in a hot water bath, or for 30 second bursts in a microwave until it's all melted.
Fold the smashed biscuits, mini marshmallows, chocolate chips, halved cherries, chopped nuts and coconut into the melted chocolate mixture.
Pour the mixture into your prepared baking tray/dish and place in the fridge until set (about 2 hours).
Cut into 9 squares and serve.
