Vegan Strawberry Pie

- 1 (9-inch) vegan pie crust
- 2 pounds fresh strawberries, sliced
- ¾ cup sugar
- 3 tablespoons cornstarch
- ¾ cup water
Prepare pie crust if using homemade. Pre-bake the crust. Preheat the oven to 350°F (175°C). Line the chilled pastry crust loosely with foil or parchment paper, and fill with baking beans. Bake for 15 minutes, then remove the beans and foil and bake for a further 15 minutes until pale golden.
Arrange half of the sliced strawberries in the baked pastry shell. Mash the remaining berries and combine with sugar in a medium saucepan. Place saucepan over medium heat and bring to a boil, stirring frequently.
In a small bowl, whisk together cornstarch and water. Gradually stir cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture until thickened, about 10 minutes, stirring constantly. Pour mixture over the strawberries in the pastry shell. Chill for at least 4 hours before serving.
